Skin Soothing Quinoa Salad

Here at Edible Beauty we strongly attest to the fact that what you put into your body can affect the look and feel of your skin. That is why we have created this delicious Mediterranean Quinoa Salad, packed full of skin-loving ingredients designed to sooth sensitive skin from the inside-out.

One of the ingredients we have included is Parsley, which is a great skin food for balancing oil production, decreasing inflammation and preventing skin discoloration. The combination of avocado and protein rich quinoa makes this a wonderful salad for reducing skin inflammation, boosting hydration and elasticity and easing redness.

Serves 2

 Ingredients

1 cup cooked quinoa

15 cherry tomatoes, halved

1 cucumber, chubed (peel if desired)

1 avocado cubed

3 tbs chopped fresh basil

1/2 cup chopped fresh parsley

1/8 cup extra virgin olive oil

1 tbs apple cider vinegar

1/2 teaspoon Himalayan salt

 Juice of 1/2 a lemon or lime

Instructions

To cook the quinoa, use one part rinsed quinoa to two parts water. Simmer covered for 30 to 40 minutes, or until the liquid is absorbed and the germ turns opaque and splits from the seed, it will resemble small curls.

Toss with a little olive oil and season with salt and pepper. NB: Cooked quinoa will keep for four days in the fridge.
