Guilt-Free Kelp Pad Thai

When it comes to gorgeous smooth and radiant skin, eating carbohydrate rich foods such as pasta and rice can play havoc with insulin levels which in turn increases sebum production resulting in oily and blemish-prone skin. As a Type 1 diabetic I am always looking for tasty alternatives to high Glycaemic Index foods which still provide the satisfaction you would get from their not so healthy counterparts. Kelp noodles are such a versatile ingredient with an incredible texture and the ability to absorb the flavour of tasty sauces used with them. As a bonus they are rich in iodine which is required for healthy thyroid function and smooth skin.  This salad also contains super hydrating ingredients such as cucumber, green mango and avocado which your skin will thank you for. Check out the recipe below for a fresh summer pad thai salad recipe that will cure any carb craving without compromising your glow.

 

Ingredients

Serves 4

  • 1 packet kelp noodles, soaked in hot water for 30 minutes and chopped in half
  • 2 cups soy bean sprouts, rinsed well
  • 1 carrot, grated
  • 1 green mango, shredded
  • ½ green papaya, shredded (optional, if available)
  • 1 bunch coriander, rinsed well and chopped
  • ½ bunch mint, rinsed well and chopped (optional)
  • 1 cucumber, shredded or peeled and diced
  • 1 avocado, peeled and diced
  • 1 red capsicum, julienne strips
  • ¼ cup roasted cashews, coarsely chopped

Dressing

  • 2 Tablespoons tahini
  • Juice of one lime
  • 2 Tablespoons olive oil
  • 1 Tablespoon grated ginger
  • 2 drops stevia or 1 teaspoon brown rice syrup
  • 2 Tablespoons coconut yoghurt
  • 1 Tablespoon nutritional yeast flakes (as topping)

Method

  • Blend dressing ingredients in pocket rocket or blender.
  • Place noodles in a bowl. Add sprouts, cucumber, carrot, mango and papaya (if using) along with herbs, nuts and avocado.
  • Add dressing and combine well. Top with nuts and savoury yeast flakes.
  • Store in a glass container for two days – the flavours intensity over night so this salad tastes delicious the next day.

Six Ways to Keep Your Sparkle This Holiday Season

With social events, entertaining and beach visits on our agendas, if there is ever a time that we want to be sparkling with youth and vitality, it's during the festive holiday period. It can be a challenge maintaining our healthy glow as this time of the year is filled with many unavoidable beauty depleting activities! A lack of sleep, poor diet, the stress of word demands, increased alcohol consumption and dehydration can often leave our skin and body feeling a little lack lustre.

Below we provide six inside out beauty tips to keep you sparkling this Christmas season:

Glorious Greens. If you are going a bit overboard with sugar and alcohol, ensure you are balancing this all out by having at least a bowl or two of greens. Greens, in particular bitter greens such as arugula, rocket, radicchio, rocket leaves, dandelion, spinach, chicory and mustard leaves are wonderful liver toners. They also help to increase the creation and flow of bile, the substance that removes waste from the organs and blood. Bitter greens will assist you in digesting your food, in particular fats so munch on a few leaves before your meal, and they will act as a great aperitif. Greens are also rich in folate and B vitamins which are essential for your body’s energy and detoxification pathways which tend to become compromised in the holiday season.

Intermittent Fasting. When eating excessive calories on a daily basis, as tends to happen during the holiday period, our hunger hormones such as ghrelin and leptin, can become imbalanced which reduces our ability to burn fat. Intermittent fasting for one or two days of the week during the holiday season can be a great way to reset your hunger hormones and increase your metabolism even if you are over indulging. Fasting may involve restricting calories on one or two days of the week and eating normally on other days or restricting caloric intake between a certain time e.g. between 12 pm to 8 pm.

Liquid Beauty Boosters.  Increasing water intake is something we all know we must do to keep our skin moist and dewy and our body’s detoxification and digestive system intact. Liquid Gold - Winter Beauty Elixirs

When it comes to avoiding dry flaky winter skin and creating the dewy, lush and moisture-rich skin which we are all after, we have a tendency to think first to what we are putting on our skin and then in our bodies. I love providing the body with absolutely everything that it may need to give us a healthy glow and that includes the below liquid gems which are ultra-nourishing and hydrating in their own right.
So whilst it may be tempting to reach for a mug of hot chocolate or coffee, give these drinks a go and you will be glowing on the inside and out this winter.

  1. Saffron

 If you had thought you had exhausted most of the skin boosting herbs and foods there were out there, you may be surprising to know that there is a super exotic skin-loving spice that is relatively undiscovered when it comes to the skin. Saffron is an exotic spice obtained from the flower “saffron crocus”. It is found in Europe and Asia and literally worth its weight in gold due to the sheer volume of flowers required to obtain one gram.

Saffron is a wonderful agent for boosting skin hydration and brightening the skin. It is rich in skin-loving vitamins including vitamin A, vitamin C, zinc and B vitamins which are all essential for healthy skin repair and renewal. What makes the spice incredibly potent is its unique profile of actives, the most important of them is a-crocin, a carotenoid compound, which gives the threads their characteristic golden-yellow colour. It also contains other carotenoids, including zea-xanthin, lycopene, a- and ß-carotenes which are powerful anti-inflammatory compounds and antioxidants which protect the skin from oxidative damage and aid in accelerating skin cell renewal. 

On the Inside: Tea is one of the best ways to ingest saffron for its beauty benefits.  The active compounds in the saffron threads are water soluble, and absorb straight into your bloodstream through your digestive system. Just add 4 to 6 strands of saffron to one cup of boiling water. Add some grated ginger (about 1 teaspoon) or cinnamon along with a pinch of stevia. Steep for 15 minutes to allow the threads to infuse and release their active compounds into the hot water. 

On the Outside: Saffron will assist the skin in retaining moisture and also has skin lightening benefits which will help you achieve an ethereal glow. It is also antimicrobial so when applied topically will help to soothe acne-prone skin. To make a mask, add a few threads of saffron to a ¼ of a cup of milk. Add a teaspoon of olive oil and let the strands infuse overnight if possible. Apply this mixture to the skin with some cotton wool and leave it on for at least thirty minutes before rinsing off.

 

  1. Kefir

You are likely to know about the benefits of fermented foods or the gut however you may not know that they also work wonderfully to rejuvenate the skin, boost collagen production and reduce inflammation.

The skin and gut axis are intimately connected which means that the microbes in our gut communicate with the bacteria that are living within the skin barrier. This means that our gut microbes have a role to play in the control of

Kefir specifically is rich in probiotics which improve gut flora and aid in the digestion of food and absorption of skin-friendly nutrients and minerals, which your body requires to create glowing and beautiful skin.

Studies have shown that acne, eczema and even psoriasis benefit from the consumption of probiotics.

On the Inside: Boost your gut friendly bacteria with a dose of kefir daily. You will notice your digestive system improves (any tendencies towards constipation will be alleviated) and your body’s detoxification processes will also get a kick start. This will allow your skin to benefit from the removal of excess toxins which can make their way to the skin barrier and the removal of excess hormones which can create hormonal skin conditions. You don’t need much kefir to provide you with skin and belly benefits. Start with 30 mls daily and build to 50 mls over the course of 2 to 3 weeks.

On the Outside: When applied topically fermented foods or probiotic rich foods have been shown to increase hydration by strengthening the fatty ceramide layer of the skin which assists in retaining moisture. They also assist in protecting the skin barrier against unfriendly bacteria, environmental toxins and free radicals which cause skin ageing.

 

  1. Chamomile

Chamomile beats most herbs when it comes to its soothing properties. This liquid gold infusion has so many skin benefits from being anti-inflammatory, anti-ageing, anti-bacterial and skin healing. One of the reasons I love it is due to its ability to reduce skin redness and irritation including relieving eczema and to combat acne. 

Chamomile’s healing properties come from its daisy-like flowers, which contain volatile oils (including bisabolol, bisabolol oxides A and B, and matricin) as well as flavonoids (particularly a compound called apigenin) and other therapeutic substances.
